The Knives

CHRISTINE RUDOLPH IN THE SMALL TUSCAN TOWN SCARPERIA, near Florence, knifemakers have been making knives there since the 15th century. The Saladini family have been making some of the world’s most beautiful knives for four generations; knives with handles made from buffalo horn and olive wood or ebony, AND WHICH ARE WELLBALANCED AND CAN BE SHARPENED AGAIN AND AGAIN. The Knives

Søllerød Inn, Brdr. Price and Restaurant KÖD in Copenhagen and Oslo use Saladini steak knives when guests order rib steak.

They prefer Saladini knives because they are sublime utensils. A steak knife that does not need serrations in the blade to cut steak with almost surgical precision. Above all, a knife that is beautiful, with its handle made from ebony, buffalo horn or olive wood – a beautiful piece of cutlery on any dinner table. Leonardo Saladini is the fourth-generation member of the world-famous knifemaking family based in the small Tuscan town of Scarperia who can call himself a ‘coltellinaio’ – a knifemaker.

The Knives

Together with Giacomo Cecchi, he has created a global success, merging centuries-old traditions with modern Italian design. But their success in creating a market for the knives in Denmark and the rest of the Nordic Region happened almost by chance. During a holiday in Italy, Søren Skydt-Nielsen came across the Saladini knifemakers in Scarperia. “It was an amazing experience to see how they cut and polished a piece of olive wood or buffalo horn to make the perfect handle. Especially the steak knives that did not have the traditional serrations - that was an eye-opener.” “We work in accordance with the old methods, which machines cannot reproduce. Every knife is unique. The small differences that you do not notice at first glance, are the mark of the individual knifemaker. It gives each knife a soul,” says Leonardo Saladini.
